How to Make Vegan Blueberry Lemon Loaf 

Spring is here, and so is the blueberries season! So, it is the perfect time to make a delicious vegan blueberry lemon loaf. If you don’t want blueberries, replace them with raspberries, strawberries, or cherries. The results are going to be delicious anyway!

Ingredients vegan blueberry lemon loaf

  • 2 cups all-purpose flour (gluten-free)
  • 1 cup blueberries fresh or frozen
  • ¾ cup almond milk
  • ½ cup vegan yogurt
  • ¾ cup sugar
  • 3 tbsp neutral oil
  • 2 tsp vanilla extract
  • ½ lemon (grated and squeezed)
  • 1 flaxseed egg (1 tsp ground flaxseed + 3 tbsp hot water)
  • 1 + ½ baking powder
  • ¼ tsp salt

Cooking Method Vegan Blueberry Lemon Loaf

1. Preheat the oven at 180 ◦ C and grease it with vegetable oil in a loaf tin. Then line it with parchment paper.

2. Mix the wet ingredients in a bowl, and add flour, baking powder, salt, sugar, and lemon zest. Mix until nice and smooth.

3. Add ¾ cup blueberries to the mixture, keep aside the rest of the blueberries.

4. Pour the mixture into the loaf pan, then sprinkle on top the remaining blueberries.

5. Bake for 55-60 minutes, or until golden brown. Test the center with a toothpick. If the toothpick comes out clean, it means the loaf is well baked. Let it cool completely before slicing.
