  • Preheat the oven at 175° C.
  • In a large bowl add coconut oil and sugar.
  • Mix until sugar is completely dissolved.
  • Add pumpkin puree, and vanilla extract.
  • Mix well.
  • Incorporate whole wheat flour, cornflour, baking powder, salt, and lemon zest.
