1.TACO HEALTHY SUPERPOWER BOWL

It is one of my personal favorite meals, you just take all those Mexican flavors and put them in a bowl and it’s going to be delicious, so it’s almost like a burrito.

Ingredients:

  • Boiled Mexican rice
  • Romaine lettuce but you can use also spinach.
  • Beans
  • Chili powder
  • Diced tomato
  • Diced bell pepper
  • Fresh avocado
  • Lime juice
  • Salsa as a dressing

To assemble the bowl, you literally just need to start with your Mexican rice as a base, and then you add the boiled beans mixed with chili powder, some fresh diced tomato, bell pepper, avocado slices, a lime wedge so you can add a fresh squeeze & your salsa dressing on top. 2. CHICKEN WITH MANGO DRESSING SUPERPOWER BOWL

It’s tasty and very versatile, you can use any green you prefer.

Ingredients:

  • Broccoli
  • Diced sweet potatoes
  • Chickpeas
  • Olive Oil & Salt, pepper, paprika
  • Quinoa
  • Roasted shredded chicken
  • Chopped mango
  • Fresh avocado
  • Cilantro

First add broccoli, diced sweet potatoes & chickpeas in a sheet-pan, toss olive oil, spices and roast them in the oven.

If you don’t want to use chicken, you can totally skip it and make a vegetarian version with just the vegetables, it’s extremely tasty just like that. For the cilantro mango dressing, add in a blender mango, lime, honey, cilantro, cumin powder, salt & pepper and some chili flakes for heat if you like it. To assemble your bowl, you’re just going to use quinoa as a base, add all those roasted vegetables as well as your cubed mango, avocado slices and shredded chicken. Now drizzle on that amazing dressing on top. It stands at #2 in Top 3 Superpower Bowls.

3. LENTIL AND OATS SUPERPOWER BOWL

This can be a perfect breakfast as well, a very unique and delicious way to get a healthy bowl either for breakfast or any other time of the day.

Ingredients:

  • Oats
  • Red lentils
  • Vegetable broth
  • Salt & pepper

To make it add all the ingredients in a pan and bring them to a boil, and then let it cook on high until all that broth is evaporated, you can season as per your taste with salt and pepper. So delicious!  It stands at #3 in Top 3 healthy Superpower meal Bowls.
