Raspberry Chia Pudding Recipe

It is being said that “chia” word comes from the Mayan language and means “power”. Most likely, they named it like this because it is a very good source of energy and health for body. And today we consume chia for the same reasons. Chia seeds are very easy to integrate in most foods, from main dishes, to desserts and drinks. I use them most often in raspberry chia pudding. How do you use them?

 Ingredients

  • 6 tablespoons chia seeds
  • 500 ml almond milk
  • 1 tablespoon maple syrup

Ingredients for raspberry jam

  • 4 cups frozen raspberries
  • ½ lime juice
  • 1 tablespoon maple syrup
  • 2 tablespoons chia seeds

  1. Add all the ingredients for pudding in a bowl and mix. Hydrate chia seeds for 30 minutes (best over-night in refrigerator).
  2. Heat a pan and add the frozen raspberries, lime juice and maple syrup. When fruits softened, crush them with a fork and add 2 tablespoons chia seeds. Cook over low flame until jam thickens.
  3. Pour a layer of chia pudding into glasses, bowls or jars, then a layer of raspberries jam. Decorate with fresh fruits and granola.

We enjoy this chia pudding with raspberry for breakfast or as a snack at the office.
