If you never tried to make apricot cakes, making an apricot cake with pistachios will be the best starting point. The aroma of well-ripened apricots along with butter and the crispy note added by pistachios will delight your taste buds.
Ingredients for Apricot Cake with Pistachios
– 125 grams white flour
– ¼ teaspoon table salt
– 50 grams granulated sugar
– 115 grams of unsalted butter (preferably cold)
– 110 grams pistachio
– 10 grams of flour
– A pinch of sea salt
– 75 grams of sugar
– 70 grams unsalted butter
– 1 big egg
– ¼ teaspoon almond extract, 2 teaspoon brandy (optional)
– Powdered sugar or 30 grams apricot jam
Preparation Method for Apricot Cake with Pistachios
1- Preheat the oven at 175 degrees Celsius. Coat a pan with baking paper.
2- For the dough, add the flour, salt, and sugar in a mixer bowl.
3- Add the cubed butter, and mix until the dough it’s formed.
4- Transfer the dough into the pan, and press until it becomes uniform.
5- Bake for 15 minutes, until the dough turns golden.
6- Take out the pan, remove the cake on a grill and allow it to cool in the fridge for 10-15 minutes.
7- For the filling, add in the mixer bowl pistachios, sugar, flour, and salt. Mix until you obtain a powder.
8- Add butter and mix until everything is fully incorporated.
9- Add almond extract, egg, and brandy. Give it a good mix.
10- Spread evenly the filling over the cooled cake.
11- Cut apricots in half, and distribute on the entire cake
12- Cut the cake into identical squares, and bake it for 60 minutes or until it turns golden.
13- Decorate it with jam.
